Among biotechnological approaches, fermentation is globally applied in the transformation and preservation of a range of raw agricultural materials (cereals, roots, tubers, fruit and vegetables, etc.). During fermentation processes of different plant matrices, the microbial metabolism, , results in the production of a diversity of metabolites, thus resulting in the modification of bioactive compound structures and functionalities.
